This project details the taste and sensory tests are being used to help identify the sensory characteristics of vegetables that children like or dislike inorder to more effectively promote vegetables and increase their consumption by children. Trials involving the preparation and presentation of vegetables in different ways in order to evaluate how much children appreciate them. Results will incorporate recommendations for overcoming identified sensory barriers to vegetable consumption and guiding vegetable production and promotion in the marketplace.
