This research project assesses the concentrations of nitrite and nitrate in Australian leafy vegetables aiming to determine the main causes of nitrate and nitrite accumulation responding to food safety and quality issues. The study revealed that high nitrate concentrations in vegetables are due to over supply of nitrate in production and not due to climatic influences and that nitrite levels are not influenced by production practices.
