This project aims to quantify the levels of potato waste in all sectors of the Australian potato industry. It provides a broad overview, offering estimates of the amount of potato waste available for by-product utilisation. A review of the literature shows that potatoes are extremely adaptable product with many by-product opportunities. In some overseas countries, production of some of the more traditional potato by-products is either static or declining. However, there are many new opportunities developing for more innovative products being produced from potatoes and potato wastes.
