Coordination Meeting For Reviewing Cadmium Issues In Potatoes & Vegetables
1 July 1999Addressing the issue of vegetable wastage on-farm and post-farm-gate, this project is developing new knowledge and processes to improve recovery of edible material. Avenues of exploration include the extraction of ‘nutraceuticals’ from vegetable waste; the processing of edible waste into new fibre-rich, healthy raw ingredients and food products; and the use of fermentation to develop next-generation fermented vegetables. The project has a focus on brassica vegetables and carrots.
This project has been funded by Hort Innovation, using the research and development levies listed below and contributions from the Australian Government. Hort Innovation is the grower-owned, not-for-profit research and development corporation for Australian horticulture.
