This project conducted a field study survey on stem end browning at different sites in the Ballarat district in 1992/93 and 1993/94 to determine factors causing the stem end browning in Russet Burbank potatoes. It established that the stem end browning in Russet Burbank potatoes is prevalent in the Ballarat District of Victoria and is associated with increased amounts of reducing sugar at the stem ends.
