This report investigated and presents the incident of after cooking darkening (ACD) of potatoes. Significant reductions in the incidences and severity of the disorder were obtained through modification of fertilizer and management strategies, with the report also highlighting numerous industry recommendations regarding reductions in prevalence of ACD.
